While professional chefs often think in instinct and technique, Era translates those ideas into recipes that anyone can follow.

She shapes the vision of the site — guiding the storytelling, recipe structure, and overall direction of the brand. Her role focuses on making sure every recipe is approachable, clearly written, and designed for everyday cooks.

She ensures that each dish published on EraRecipes serves real people in real kitchens.

Together with Callie, she works to bridge the gap between professional cooking knowledge and practical home cooking.

My name is Callie Morgan, and I’m a 33-year-old executive chef based in Portland, Oregon.

I’ve always been fascinated by how a single bite can transport you somewhere else — across cultures, memories, and time. That sense of connection is what drew me into the culinary world.

I grew up in Charleston, South Carolina, where my grandmother ran a small soul food diner off King Street. Much of my childhood was spent in that kitchen, where I learned the foundations of cooking — discipline, patience, and respect for ingredients.

We washed collard greens three times.
We made hot sauce from scratch.
We knew exactly where our food came from.

Those early lessons continue to guide how I cook today.

I later attended the Culinary Institute of America in Hyde Park, where my training expanded into fermentation, butchery, and global techniques. My career took me through kitchens in Copenhagen and Tokyo, experiences that shaped my approach to flavor and technique.

Today my cooking blends modern American cuisine with global influence — somewhere between the umami depth of Japanese cooking and the bold smokiness of American barbecue.

But above all, I believe cooking should be shared and understood.

I don’t believe in secret recipes.
I believe in understanding why something works.

My career hasn’t been perfect. I’ve burned sauces before service, over-reduced a demi-glace on a review night, and once forgot to order shallots for an entire tasting menu.

Those mistakes taught me humility, resilience, and the importance of preparation.

They’re also why I teach cooking with honesty and practicality.
