BBQ Chicken Skewers for Backyard Cookout Nights

Ingredients
  

BBQ Chicken Seasoning
  • 1/4 cup chili powder
  • 1 tablespoon paprika
  • 1/2 teaspoon ground thyme
  • 2 teaspoons salt
  • 2 teaspoons garlic powder
  • 1/2 teaspoon black pepper
  • 1 teaspoon cumin
  • 1/4 teaspoon cayenne pepper adjust to taste
  • 1 tablespoon brown sugar
  • 2 boneless skinless chicken breasts, cut into cubes
For the Skewers
  • 3 green bell peppers cut into large pieces
  • 3 red bell peppers cut into large pieces
  • 1 large onion cut into chunks
  • 10 to 12 skewers soaked in water if wooden
For Grilling
  • 2 tablespoons olive oil

Method
 

  1. If using wooden skewers, soak them in water for at least 30 minutes before assembling the kebabs.
  2. In a small bowl, combine the chili powder, paprika, thyme, salt, garlic powder, black pepper, cumin, cayenne pepper, and brown sugar.
  3. Place the chicken cubes in a large bowl and toss them with the seasoning mixture until evenly coated. Let the chicken rest for about 10 minutes.
  4. Thread the chicken, bell peppers, and onion pieces onto the skewers, alternating the ingredients as you go.
  5. Heat the grill to approximately 400°F.
  6. Place the skewers on the hot grill and cook for 10 to 15 minutes, turning them occasionally.
  7. Brush the skewers with olive oil several times during cooking to help keep them moist and promote browning.
  8. Continue grilling until the chicken reaches an internal temperature of 165°F.
  9. Remove from the grill and serve immediately while hot.

Notes

Cut chicken pieces evenly so they cook at the same speed.
Soak wooden skewers before grilling.
Do not overcrowd the skewers.
Use an instant-read thermometer to check doneness.
