Heat the olive oil in a large Dutch oven or heavy pot over medium heat. Add the ground beef and onion. Break the beef into small crumbles and cook until the beef reaches 160°F and the onion is softened.
Remove excess grease:
Turn off the heat briefly if necessary and carefully remove any large amount of rendered fat while leaving the beef and onion in the pot.
Add the gnocchi and seasonings:
Reduce the heat to medium-low. Add the garlic, salt, garlic powder, oregano, basil, and potato gnocchi. Stir well and cook for about 1 minute, separating any gnocchi pieces that are stuck together.
Simmer in the creamy liquid:
Pour in the chicken stock and heavy cream. Stir, cover the pot, and cook for about 6 minutes, stirring once halfway through so the gnocchi cooks evenly.
Finish the Parmesan sauce:
Add the peppadew peppers and finely shredded Parmesan. Stir gently until the cheese melts and the sauce becomes creamy and smooth.
Finish and serve:
Remove from the heat, sprinkle with fresh parsley, and serve while the sauce is warm and creamy.
CHEF’S TIP
Finely grate Parmesan from a block for smoother melting.
Remove only excessive beef fat; a small amount adds flavor.
If leftovers become thick, add a splash of chicken stock while reheating.
