Ingredients
  

  • 1 lb russet potatoes 3 to 4, skin on, cut into wedges
  • 2 Tbsp olive oil
  • 1 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1 tsp kosher salt
  • 1/2 tsp cracked black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp ground paprika
For serving
  • Chopped fresh chives
  • Ranch dressing or bleu cheese dressing
  • Sriracha ketchup or regular ketchup

Method
 

  1. Preheat oven to 425°F. Line a large baking sheet with parchment paper.
  2. Rinse and pat potatoes dry. Cut into wedges and place in a large bowl.
  3. Drizzle with olive oil and toss to coat well.
  4. In a small bowl, whisk together parmesan, Italian seasoning, salt, pepper, garlic powder, and paprika.
  5. Sprinkle the seasoning mixture over the wedges and toss to coat well.
  6. Arrange wedges on the baking sheet in a single layer.
  7. Bake for 35 to 40 minutes, until tender and golden.
  8. Sprinkle with chopped chives if desired and serve with dipping sauce.

Notes

Keep wedges in a single layer for the best texture.
Reheat in the oven or air fryer for crisp edges.
Russet potatoes work best for fluffy centers.
