Easy Sheet Pan Chicken Pitas

Roasted yogurt-marinated chicken, crispy sheet pan fries, tzatziki, and fresh toppings wrapped in warm pita. These Sheet Pan Chicken Pitas are easy, flavorful, and great for build-your-own dinners.

Ingredients
  

Chicken
  • 1 1/2 lb chicken breasts or thighs thinly sliced
  • 1/3 cup full-fat plain Greek yogurt
  • 1/4 cup olive oil
  • 6 cloves garlic
  • 1 Tbsp smoked paprika
  • 2 tsp dried oregano
  • 1 tsp curry powder
  • 1 tsp onion powder
  • Chili flakes to taste
  • Salt and black pepper to taste
Fries
  • 4 russet potatoes cut into matchsticks
  • Olive oil salt, and black pepper
Other
  • 6 fresh pitas or naan warmed
  • 1 cup tzatziki
  • Pickled red onions
  • Shredded lettuce
  • Fresh dill and parsley
  • Crumbled feta cheese

Method
 

  1. Preheat the oven to 425°F.
  2. Toss the chicken with yogurt, olive oil, garlic, paprika, oregano, curry powder, onion powder, chili flakes, salt, and pepper.
  3. Spread the chicken on a baking sheet. Bake 15 minutes, toss, then bake 5 to 10 minutes more, until cooked through. Broil 1 to 2 minutes to char the edges if desired.
  4. On a second baking sheet, toss the potatoes with olive oil, salt, and pepper. Roast 20 minutes, until crisp and tender.
  5. Stuff the warm pitas with lettuce, fries, chicken, and tzatziki. Top with pickled onions, herbs, and feta.

Notes

Slice the chicken thinly for the best cook time.
Spread the fries out well for crisp edges.
Great as pitas, bowls, or salads.
