Ingredients
  

Brownies
  • 1/2 cup granulated sugar
  • 2 Tbsp salted butter
  • 2 Tbsp water
  • 1 cup semi-sweet chocolate chips
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2/3 cup all-purpose flour
  • 1/4 tsp baking soda
  • 1/2 cup semi-sweet chocolate chips
Caramel Topping
  • 30 caramels unwrapped
  • 1/4 cup salted butter
  • 2 Tbsp heavy cream
Top
  • 1/2 cup toasted coconut
  • 1 cup chocolate chips

Method
 

  1. Heat oven to 350°F. Line a 9-inch square pan with parchment and spray lightly.
  2. In a saucepan, cook sugar, butter, and water over low heat, stirring, until boiling. Remove from heat and stir in 1 cup chocolate chips until smooth.
  3. Beat in eggs and vanilla until blended.
  4. Add flour and baking soda. Mix just until combined, then stir in 1/2 cup chocolate chips.
  5. Spread into the pan and bake 18 to 20 minutes.
  6. While brownies bake, microwave caramels, butter, and cream until melted and smooth, stirring often.
  7. Pour caramel over the baked brownies and spread evenly.
  8. Sprinkle with toasted coconut and chocolate chips.
  9. Cool completely before cutting.

Notes

Spread the caramel while it is still warm.
Cool fully for the cleanest slices.
Toasted coconut gives the best flavor.
