Ground Turkey Sweet Potato Skillet

Lean ground turkey, tender sweet potatoes, mushrooms, onion, and garlic cook together in one skillet for an easy family dinner ready in about 25 minutes.

Ingredients
  

  • 1 tablespoon extra-virgin olive oil
  • 1/2 medium yellow onion diced
  • 2 cloves garlic minced
  • 1 pound lean ground turkey
  • 2 medium sweet potatoes scrubbed and diced
  • 1 cup sliced mushrooms
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Instructions
 

Soften the onion and garlic:

  1. Heat the olive oil in a large cast-iron skillet over medium heat. Add the diced onion and minced garlic and cook for 2–3 minutes, stirring frequently, until softened.

Brown the ground turkey:

  1. Add the ground turkey. Break it into small crumbles and cook for about 5 minutes, stirring occasionally, until no longer pink and the meat reaches 165°F.

Add the vegetables and seasoning:

  1. Stir in the diced sweet potatoes, sliced mushrooms, salt, and black pepper until everything is evenly distributed.

Cover and cook until tender:

  1. Cover the skillet and cook for 10–12 minutes, stirring occasionally, until the sweet potatoes are fork-tender while still holding their shape.
CHEF’S TIP
Cut the sweet potatoes into evenly sized small cubes so they cook at the same rate.
Keep the skillet covered during most of the final cooking time so the trapped heat helps soften the sweet potatoes.
Refrigerate leftovers for 3–4 days and reheat to 165°F.
