Tender lemon-herb chicken cooks low and slow, then gets tucked into warm pita with crisp vegetables and creamy homemade tzatziki. These Slow Cooker Chicken Gyros are easy, fresh, and ideal for weeknight dinner.
Spray the slow cooker with nonstick cooking spray and place the chicken breasts inside.
In a bowl, mix together the garlic, lemon juice, diced onion, water, olive oil, red wine vinegar, oregano, allspice, and lemon pepper.
Pour the mixture over the chicken. Cover and cook on HIGH for 3 to 4 hours or on LOW for 6 to 8 hours.
For the tzatziki, mix all the sauce ingredients together in a bowl. Cover and refrigerate for at least 1 hour.
Once the chicken is cooked, shred it in the slow cooker using two forks.
Serve the shredded chicken with warm pita bread, sliced tomatoes, sliced onions, sliced cucumbers, lettuce, and tzatziki sauce.
