No-Bake Cake Batter Protein Bites

Soft, sweet no-bake protein bites made with almond flour, cashew butter, vanilla, and sprinkles. These Cake Batter Protein Balls are quick to prep and easy to keep in the fridge or freezer.

Ingredients
  

  • 1 cup almond flour
  • 1/2 cup oat flour
  • 1/3 cup vanilla plant-based protein powder
  • 1/4 tsp fine sea salt
  • 1/2 cup cashew butter or almond butter
  • 1/4 cup pure maple syrup or honey
  • 1 tsp vanilla extract
  • 1/4 to 1/2 tsp almond extract
  • 2 to 4 Tbsp sprinkles divided
  • 1 Tbsp unsweetened vanilla almond milk if needed

Method
 

  1. In a medium bowl, whisk together almond flour, oat flour, protein powder, salt, and 1 to 2 tablespoons sprinkles.
  2. Add cashew butter or almond butter, maple syrup or honey, vanilla extract, and almond extract. Stir until a dough forms.
  3. If the dough seems dry, add 1 tablespoon almond milk and mix again.
  4. Roll into 14 to 16 balls.
  5. Place remaining sprinkles in a small bowl and roll or press each ball into the sprinkles.
  6. Store in the fridge or freezer.

Notes

Cashew butter gives the smoothest texture and mildest flavor.
Chill briefly if the dough feels too soft to roll.
Keep refrigerated for the best texture.
