Peanut Butter Yogurt Snack Bites

Creamy frozen yogurt bites made with Greek yogurt, peanut butter, honey or maple syrup, and vanilla, with optional chocolate chips and chopped nuts. These Frozen Peanut Butter Greek Yogurt Bites are easy to prep and easy to keep in the freezer.

Ingredients
  

  • 2 cups plain Greek yogurt low-fat or non-fat
  • 1/2 cup peanut butter natural, creamy, or crunchy
  • 1/4 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 1/2 cup chocolate chips optional
  • 1/4 cup chopped nuts or seeds optional

Method
 

  1. In a large bowl, combine the Greek yogurt, peanut butter, honey or maple syrup, and vanilla extract.
  2. Mix until smooth and creamy with no lumps.
  3. Fold in the chocolate chips and chopped nuts or seeds if using.
  4. Line a mini muffin tin or silicone mold with paper liners, or lightly spray with cooking spray.
  5. Spoon the mixture into the cups, filling each one to the top.
  6. Tap the pan gently on the counter to settle the mixture.
  7. Freeze for at least 2 to 3 hours, until firm.
  8. Remove the bites from the tin or mold and store in an airtight container in the freezer.

Notes

Thick Greek yogurt gives the best texture.
Silicone molds make removal especially easy.
Let the bites sit briefly if they feel too firm straight from the freezer.
